I had a post all planned and ready to go up today, and then my friend Nicole dropped off the most amazing biscotti on my front porch (because Italians do awesome things like drop off delicious homemade food to your doorstep, unsolicited), and it threw the most delicious and crunchy wrench into my plans to post about something else–something that’s not nearly as awesome as homemade desserts.
So, the other post will be back later. Now it’s time for cookies. I will cancel any post for cookies.
Because cookies.
Anyhow.
Not only was she so kind as to drop off said delicious cookies–which I consumed immediately as my post-breakfast dessert–but also, when I asked her to share the recipe she did so, like immediately.
Because Italian people.
So I am glad to share with you what I am now branding My Italian Friend Nicole’s Post-Breakfast Biscotti. Enjoy! I did.
2 sticks of butter softened
1 1/2 cup sugar
5 cups of flour
1/2 cup of vegetable oil
3 teaspoons of baking powder
6 eggs
Form dough into 2-3 long rolls about 3 inches thick.
Place on ungreased cookie sheet. Bake at 375 for about 25 minutes until able to cut.
Take out, cool slightly, and cut at an angle into biscotti shape.
Lay sliced pieces flat on cookie sheet and bake until golden and crisp.
Enjoy! And don’t blame me for the extra five pounds! 😛
