When all else fails, CARBS. Amiright? If there ever were a time for getting re-acquainted with your kitchen, and whipping up a treat in the process, now is it. I shared this recipe a while back for authentic Italian biscotti from my friend Nicole, and since I’m going to be trying to make it myself this week, I thought I’d share again!
2 sticks of butter softened1 1/2 cup sugar5 cups of flour1/2 cup of vegetable oil3 teaspoons of baking powder6 eggs
Form dough into 2-3 long rolls, about 3 inches thick.Place on ungreased cookie sheet. Bake at 375 for about 25 minutes until able to cut.Take out, cool slightly, and cut at an angle into biscotti shape.Lay sliced pieces flat on cookie sheet and bake until golden and crisp.
